Meristem is one of those wines that you can pair with almost anything. It has sturdy, deep Syrah and elegant, ephemeral Pinot Noir. You can go bold, or you can go light - both win. This dish is a "kitchen sink" pasta. It has everything from earthy, wild mushrooms to sweet, sun dried tomatoes. Perfect for matching up with the Meristem. Oh - and it has bacon, so you know it's good :)
